Is it bad that I ate a one quart tub of ice cream in 3 days? It was only $1.99 and from Trader Joe's: Candy Cane Joe-Joe's 'n Cream. It's the best ice cream I've had in a while. It had a LOT of cookies in there.
PS - Since eating time is at a premium, I'm looking for high caloric foods that are a) relatively healthy and b) non-dairy. Any ideas or suggestions?
1 Quart in 3 days? What discipline you have! That would barely last me a day!
ReplyDeleteAs for food... Home made granola bars perhaps? At Safeway I've found a package of premixed granola.
1/2 c. light corn syrup
2/3 c. peanut butter
3 c. granola (sometimes you have to crush the prepackaged stuff a bit)
Heat corn syrup to boiling in a large saucepan. Boil just 1 minute. Remove from heat. Stir in peanut butter until smooth. Stir in granola. Pat mixture into a 9x9 inch buttered pan, with a dampened spatula. Cool 1 hour. Cut into bars about 2x1 inch.
